Grab and Go Breakfast Ideas

gluten-free banana cake

cream for 3-5 minutes:

2 sticks butter
1/4 C – 1/2 C sugar


6 eggs
1 T vanilla
4 – 6 bananas
1/2 C plain yogurt

mix well. then add:

3 C oatbran
2 C quick oats
2 C whole oats
1 t baking powder
1 1/2 t baking soda
1/2 t kosher salt

mix well. pour into muffin tins and bake at 350 for 10-15 minutes. you can sprinkle with powdered sugar when it’s cooled 🙂


baked oatmeal

whisk together:

1/2 C expeller pressed canola oil
1/2 C evaporated cane juice (or you can use white sugar)

add to oil/sugar mixture, and whisk:

6 eggs
2 t vanilla
2 C milk

whisk into wet ingredients:

1 T baking powder
1/2 t salt
1 – 2 T cinnamon

switch to a spatula/scraper, and incorporate dry ingredients:

6 C old-fashioned rolled oats (not quick-cooking)
1 C flaxseed meal
1 – 2 C dried cranberries, raisins, or diced apples

pour mixture into 9×13 pan or muffin tins, flatten/smooth, and bake for 35 – 40 minutes (or 10-15 minutes for muffins) at 350.

**You can eat baked oatmeal warm with milk poured over it, or dry like a muffin.


individual egg casserole


1 Package Ham (or any kind of meat)
1/2 onion
any kind of vegetables


7 eggs
1/2 cup plain yogurt
1 T stone ground mustard
cheese (as much as you want)

Put a spoonful of the meat/veggie mixture in the bottom of the muffin tins.  Pour the egg mixture on top.  Gently stir each muffin tin.  Bake at 350 for 20 minutes or until egg is set.



blueberry banana smoothie

blend together:

1 banana
1 cup blueberries (I use frozen wild blueberries)
1/2 cup orange juice or milk
3/4 cup yogurt (I use vanilla)
a handful of spinach (optional)
flaxseed (optional)

    Camye—I’m especially interested in the individual egg casseroles, as I am planning a Longaberger bus trip Nov. 8th and expecting to serve 56 people breakfast on the bus! How many of the little individual casseroles does the one recipe make? I am also intrigued by the little close top lid containers shown in the photo. Can you give me any more information on where to get those? Thanks. love all the recipes—can’t wait to try them…..

      Thanks! The recipe made about a dozen mini casseroles. The containers are from Walmart (Great Value brand) right next to the ziploc bags. Hope you enjoy!

    We make Erin’s fantastic pancakes every Thursday night and eat them cold as grab and go on Friday mornings! Oh and the spinach in the smoothies is in no way detectable Momma’s! 😉

    May I add another suggestion to the make-ahead idea?
    It is allergy-friendly and So delicious. Freezes well, too.
