deep dish spinach artichoke pizza

I’m not sure who came up with the ever-so-popular spinach and artichoke combination, but I do think we should thank them.  You see this combo on every menu from national chain restaurants to local establishments.  Most everyone who even claims they do not like spinach, nor artichokes, like the dip.

I’m sure the loads of melty cheese helps a bit.

So we are nearing the corner to Christmas….and the corner to where your mom, brother, sister, cousin or aunt ask you to “bring a side” to the gathering.  If you are like many families, the meal may consist of one nice big dish {ham, turkey, soup, lasagna}, but the rest on the table seem to be “snacky” items.

You spend your evening grazing and stuffed to the gills, but it is worth it.  So, if you are asked to bring a “side” this Christmas, I’ve got a hearty, filling appetizer to bring to your table.

Think dip and pizza all in one.  And it will feed a crowd!

Deep Dish Spinach Artichoke Pizza

For the dip spread:
1 pkg. spinach, thawed and drained
8 oz. cream cheese
1 jar marinated artichokes, drained and chopped
1/2 c. parmesan cheese
1/2 c. mayo
1 c. shredded mozzarella cheese
2 cloves garlic, minced

Additional:
6 large slices provolone cheese

For the crust:

Preheat the oven to 425 degrees.  If you have a 9×13 pizza stone pan, preheat that as well.  Otherwise a regular 9×13 pan will work too.

Combine all dip ingredients and set aside.  Spread out pizza dough with greased fingers and stretch to fit the pan.  Top with sliced provolone cheese slices.  Then spread on the dip.  Sprinkle with additional parmesan cheese if desired.  Bake for 15 minutes or until golden brown and bubbly.  Cut into strips and serve immediately.
